Matcha Green Tea Cookies
Add some colour and unique flavours to your biscuit tin, and bake yourself some of these delicious green tea cookies.
Ingredients (makes around 20 cookies):
- 75g fine caster sugar
- Half a tbl spoon of Vitalife matcha cooking grade powder
- 70g butter
- 90g all-purpose flour
- 2 egg yolks
Instructions:
- Mix caster sugar and Matcha powder in a bowl
- Add butter and stir until the mixture is of a crumbly consistency
- Add flour and mix
- Add each of the 2 egg yolks separately, stirring after adding each
- Press mixture into a ball, cover with cling film and place in fridge for 15 mins
- On a floured surface, roll mixture into a sheet of 5mm thickness
- Cut cookie shapes from the sheet
- Bake at 165 C until cookies begin to go golden around the edges
- Take cookies out of oven and place on a rack to cool
